I have never been a fan of chow mein from the Chinese restaurants it always seemed soggy with not much flavor. I decided to try and come up with something that was less soggy and loaded with flavor. I used chicken thighs but you could use chicken breast if you like. The slightly crunchy veggies are yummy all on their own sauteed with the garlic and ginger. This is definitely one of my new favorite meals. Ohh and its even better the next day!
